If we change some sterling into Sri Lankan rupees on arrival at Colombo airport, will we be OK to change any left-overs (possibly!) back into sterling on our home return to the airport ?

Yep. AS LONG AS you show exchange slips for at minimum the re-exchange amount; from the airport bank or from bank/hotel or ATM inside the country. Not from the black market changer ;-)
